Minestrone Soup

11/2 litres of water

1 onion

1 carrot

2 celery stalks

150gms  yellow split peas (soaked overnight in water, then drained)

2 chopped spinach balls

440 gm tin 4 bean mix

400 gm tin tomato soup

2 teaspoons dried oregano

1 teaspoon dried basil

¼  pkt ABC pasta

 

Method

In processor chop roughly the onion, carrots, celery, zucchini

Rinse peas that have been soaked overnight, until water runs clear

Place a large pot on to boil the 6 litres of water

Slow boil for half an hour add vegetable mix and slow boil for another 30 mins

Add the pasta, tomato soup , herbs, 4 bean mix and stir so doesn’t stick to bottom

Once the pasta is soft then season with salt and pepper
